Currently, part of our winemaking is handled by our partner, L'Union Champagne, a cooperative renowned for its expertise in Avize Chardonnay grapes. This allows us to ensure consistent quality, while preparing for our transition towards a fully self-managed production.

We have in fact begun a new phase: gradually reintegrating all production facilities on-site, including the press, vats, cellars, and more, to regain control over every stage, from grape reception to aging, all the way to bottling.

Our Champagnes are made exclusively from Chardonnay, the noble grape variety of the Champagne region, which we select from the heart of the Côte des Blancs vineyards, on terroirs classified as Premiers and Grands Crus.

We work in partnership with growers who share our values. Each batch is tasted, selected and blended with care, in respect of the vintage's identity and the typicity of the place.

The aging process, the key to the elegance of our Champagnes

Our cellars ensure the aging of wines at an ideal temperature, around 12°C, which helps preserve freshness and quality.

For maturation, we use both stainless steel and oak barrels. The idea is to bring richness to the wine through barrel work.

We favor bottle aging over long periods, in order to fully optimize the great aging potential of Champagne wines.

Soon, we will also integrate grapes from our village, Mareuil-sur-Aÿ, to blend the Chardonnay from the Côte des Blancs with the structure of the Pinot Noir from the Vallée de la Marne.
